Mexican Chili

Cook Time

Ingredients

  • 1 onion
  • 2 garlic cloves
  • 2 cans of Goya red kidney beans
  • 2 Andouille turkey sausages
  • 2 tbsp. olive oil
  • 5 tomatoes 
  • 2 poblano peppers
  • Adobo (desired amount)
  • 1/2 tbsp. ancho Chile pepper powder
  • 1/2 tbsp. dried cilantro
  • 1/2 tbp of cumin
  • Can of chipotle peppers in adobo sauce
  • 2-3 dollops of sour cream or Greek yogurt
  • 1 lb. ground turkey
  • 1/4 cup of Fresh cilantro
  • Black pepper (desired amount)
  • Avocado (optional)

Directions

  1.  Dice onion and mince garlic.
  2. Chop Andouille turkey sausage, 1 tomato, and fresh cilantro.
  3. Wrap the poblano peppers in aluminum foil. 
  4.  Broil the poblano peppers in the oven for about 5 minutes per side or until the skins are dark and bubbly.
  5. Chop the poblano peppers and remove seeds. Place aside. 
  6.  Heat 1 tbsp. olive oil on medium heat in a skillet. 
  7. Add and sauté onions and garlic. 
  8.  Place half of the onions and garlic in the blender. 
  9.  Add chopped Andouille turkey sausage and cook until done. 
  10.  Meanwhile, add 4 tomatoes, chopped roasted poblano peppers, adobo, Ancho Chile pepper powder, dried cilantro, cumin, sauce from the can of chipotle peppers (DON’T INCLUDE PEPPERS), sour cream or Greek yogurt, and mix until blended smoothly.
  11.  Heat 1 tbsp. olive oil on medium heat in a skillet. 
  12.  Add the ground turkey and season with adobo, pepper, and fresh cilantro. 
  13.  Place a pot on low heat (simmer) add sauce, ground turkey, Andouille turkey sausage, 1 chopped tomato, and Goya red kidney beans.
  14.  Mix thoroughly and simmer for approximately 5 minutes. 
  15.  Pick out your signature bowl, serve yourself a helping, grab a sweet spot at the table, and enjoy some quiet time with Christ! 
  16. Optional: Cut slices of avocado as a topping.
